Pretty. Easy. Charred Poblano, Corn, and Pancetta Pizza

This month’s Pretty Easy is a ploy to teach an old dog new tricks. It’s a Charred Poblano, Corn, and Pancetta Pizza dedicated to Dad since this weekend will be all about him.

Okay, wait, I just reread that and realized I made my Dad out to be an old dog and that’s probably un-kosher seeing as I’m supposed to celebrate him for the next few days. But here’s the deal – my Dad is a bit of an old dog in regards to his eating habits — if not for his health, he’d have a cheese plate, some short ribs, and Pecan bars every meal. So when I told him I wanted to make this Charred Poblano, Corn, and Pancetta Pizza and top it with arugula, he was not sold — at first, at least.

Charred Poblano, Corn,  and Pancetta Pizza | aidamollenkamp.com | #pairswellwithfood So, I concocted this pizza to help convince him and I settled on a flavor compromise —  added in some spice and porky bits with the poblano and pancetta, then snuck in (or really just scattered with abandon), some fresh sweet corn and arugula. I’m planning on serving it up on Sunday so fingers crossed he likes it.

And if he doesn’t like it? Well, I’ll give him one of the modifications below and remind myself that you can teach an old dog new tricks — just very, very slowly.
